As for the HUD, if you playing on PC I recommend the Friendly HUD mod. You can specify many of the options in the mod, and it uses several UI elements only when they are needed and such. If you are playing on the console, it might be a bit harder I guess but I still recommend at least turning the minimap and quest texts off.
